The hotter the better with chilies like the habanero, jalapeno, and Tabasco. The other usual ingredients that are mostly found in Mexican food recipes are meat like chicken or beef, fish, and some seafoods, vegetables like onions and tomatoes, and fruits like avocado and papaya. And one of their most important contributions in food history is chocolate. They incorporate the fermented, roasted, and grounded fruit of cacao into their foods like champurrado or make it into a hot choco.

The most popular Mexican food recipes are tortillas, enchiladas, burritos, quesadillas, picadillo, tamales, empanadas, and tacos. They also love making dips and sauces like homemade salsas, and guacamoles. To counter the hotness of the chilies being used in most of their foods, they like to whip out several desserts and sweets like flans, churros, coyotas, churros, polvoron, and paletas. Their foods are accessible and easy to prepare that they are they can be seen on the street sides of different cities around the world or on five star restaurants and hotels.

Authentic Mexican food recipes originated from Mexico but it has a lot of roots from around the world. The dishes have evolved throughout the years with the mix of the local and European influences since the 16th century. They also have elements from the Mayan and Aztec Indians to the French and Spanish cuisines whose people have settled in the country for several years. These different groups are blended and mixed well into the recipes, creating a fusion between the old and new world of flavors. The foods also vary from region to region within the country depending on the climates, the local ingredients available, and technique of cooking that has been passed through to the next generation after the other. In fact, UNESCO has even included the traditional Mexican cuisine in 2010 into their list of the “world’s intangible heritage” stating that it is “a comprehensive cultural model comprising farming, ritual practices, age-old skills, culinary techniques and ancestral community customs and manners.”
